Great Times in January
January has been great... minus the crazy cold weather in Provo. We've had a lot of fun celebrating the new year, Matt's birthday, and just hanging out. I haven't been the best this month, but here are some fun pictures.
We also celebrated Matt's birthday on the 12th! Matt is now 23 just like me :). Now that I look back on this day it seems like all we did was eat haha.

A few weeks ago I woke up to a VERY pleasant surprise... SNOW DAY! I actually spent the whole day at home cleaning out our extra bedroom but it was just what I needed. It turned out to be pretty fun actually because I found some treasures... check them out!

Aladin pants from Egypt. I actually wore these for the majority of the day. They're SOO comfy. Thanks Seth and Stacie for giving these to Matt back in the day. They were a great addition to my dance moves while I was rocking out to Shania Twain :)

Last week we got invited to go to Color Me Mine with our friends Clayton and Kortney. We decided to paint a coaster set together. This is a picture of them before they were fired but they turned out really cute. We were pleased.

This Week's Menu: 1
I love cooking. In fact, one of my favorite things about being married is that I always have someone to cook for. I know it's cheesy, but it's true. Matt likes my food and I like to cook for him so it's a win-win situation. We're one happy couple haha.
Anyway, sometimes life gets busy and it's hard to stay on top of everything... including making healthy and tasty meals. Recently I have been trying to maintain better balance of the things I try to juggle every day. One thing that has helped me stay more balanced is my beautiful new crock pot with a timer that I love oh so much :). Matt made fun of me for wanting one so badly for Christmas, but it really has made cooking a lot easier lately. Thanks Nate & Elisabeth!
I know this isn't a cooking blog, but it's a blog about mine and Matt's lives and considering food is a big part of our lives I've decided to start blogging about some of our weekly meal plans. I'm not an expert and I'm sure some of the things I make won't look good to you, but I'm always looking for new ideas so I figured I'd share some with you to hopefully give you a couple new ideas. Feel free to comment and add your meal plan or any ideas you have. I'm always looking for new recipes to try.
First up we have Vegan Enchiladas with Cilantro Cream Dressing. This is part of our new goal to have a meatless meal every week. "Meatless Monday" sure has a nice ring to it, but Mondays is one of my Zumba nights so I might have to change it to something ridiculous like "Take the Meat out Tuesday" or something.
Next is Provencale Chicken Supper. I haven't tried this one either, but it looks like a really easy, healthy crock pot meal which is great for us.
I also found a soup recipe that sounds like a fun twist off of the classic chicken noodle that we're going to try this week called "Rosemary Chicken Noodle Soup". With all this crazy weather in Provo soups have been a lot of fun this winter.
I try to have a quick meal that I can throw together on Tuesday nights after my sister and I go grocery shopping. This week I want to try these spicy black bean wraps I spotted on Pinterest.
Finally I wanted to include one of our favorite recipes in this plan this week. I think I probably like these even more than Matt does, but they're one of my go to recipes that I never get tired of.

Her Dang Good Eye
Every Tuesday I go grocery shopping with my sister, Sarah and she is down right hilarious. Here's the quote from today... "So on Friday it was snowing quarters and one got in my eye... my dang good eye!" Maybe you had to be there, but you guys are all missing out because Tuesdays are always eventful for me. So lucky that I have the coolest sister.

The Most Wonderful Time of the Year... Our First Christmas together
I love the holidays (minus this crazy this cold weather we've had in Provo). Everything makes me so happy and it's been really fun having our own little apartment to decorate and get excited about. Matt and I were pretty busy in December but we got to do all of the big things I wanted to do at Christmas time this year so I've been a very happy camper. I didn't go too crazy with decorating this year because we weren't in our apartment for Christmas, but it was still fun to make our apartment a jolly place to be.
Here are some of our Christmas adventures and projects:
Our first gingerbread house! Mike & Ally came over for family night and we made gingerbread houses. I was a little nervous about ours at first because Matt decided to take a giant bite out of the corner and then later our house was falling apart, but I was very happy with the end product.
Matt also got a stocking from me complete with goldfish crackers, hi-chews, silly putty, and a new wallet that is a money clip.
We also went to the Mesa temple to see the lights. It was so great to be home. I love the Mesa temple.

We also went goofy golfing with my family at Golfland. It was packed but it was really fun. Too bad I lost my lead halfway through.
Mine and Matt's good friend Trevor got married in December and had his reception in Mesa after Christmas. I don't have any pictures of our bigger group of friends right now, but I do have this one of me with my best friends Shauni and Tara. They really make me miss living in Mesa. It's just not the same when you only get to see your best friends a couple days a year.

Our first Christmas card picture. I hope you're not offended if you didn't get one. I only sent them to our parents, grandparents, and siblings this time around. Maybe next year we'll branch out.
Temple Square... My parents were in Salt Lake and we met up for the Cheesecake Factory and the temple lights. It was great to see them! The only downside of this little trip to SLC was that my new mittens that I loved so much got a big hole in the top :(

I made stockings this year! They're a lot cuter close up but my picture on my phone wouldn't send. Just imagine how cute they are.
Stockings! Matt & I gave each other stockings before we left for Mesa. My stocking was perfect... more cozy socks, a meat thermometer that I've wanted for a long time, silly putty, and a jr. slinky :)

Basically Christmas and our whole break was tons of fun. It was a little crazy trying to juggle being with both my family and Matt's family, but I think over all it was a success. I am so grateful my family and for my new family that I married into. The Caltons are awesome people and I really do love them. I realize now that I didn't ever take out my camera when I was at their house, but we had fun adventures of watching "Muppets Christmas Carol", decorating sugar cookies, playing with the nieces and nephews, watching Les Miserables (amazing!), and just hanging out. I'm a little sad to be back in Provo because I don't get to play anymore, but the holidays were great this year. We are so blessed.
